        Chicken Enchiladas

        About Recipe:: Recipe was gotten from my co-worker Sue and I have made it many many times as they are so good.

        Serves:: 4

        Ingredients:: Chicken {either cooked or canned}
        1 can cream of chicken soup
        1 cup sour cream
        1 small can diced chilies
        2 Tbls chili powder
        1 Tbls olive oil or margarine
        1/2 cup chopped onions
        Shredded Cheddar or Monterey Jack Cheese
        Flour Tortillas

        Directions:: Cook chicken {either brown or boil, and cube or tear apart}
        Chop onions, brown in margarine or olive oil. Add chili powder and cook til caramelzed. Add chopped chilies with juice. Mix and then add chicken. Mix soup and sour cream in separate bowl. Take about 1 cup mixture and add to chicken. Simmer until warm through.

        Preheat oven to 350 degrees. Spread about 2 tablespoons of the sour cream mixture in bottom of 9X13 pan. Place about 1/2 cup of the chicken mixture on each tortilla and roll, placing them seam side down in pan. Repeat. Pour remaining sauce over enchiladas, sprinkle with cheese. Bake for 25-30 minutes or until warm and bubbly.
