Directions:: Preheat oven to 350 degrees. In a large fry pan, cook sliced zuccinni, diced tomato, chopped onion and garlic in olive oil for 10 minutes on medium heat. In the meantime, boil rotelli noodles, drain and place in large casserole. Sprinkle with olive oil. Top noodles with veggies, sprinkle with parmessan cheese. Bake in 350 degree oven for 1 hour.
Additional:: Add diced chicken marinated with lemon pepper marinade and Lawry's seasoned salt for added flavor.
