Serves:: Serves 4
Ingredients:: 1/3 cup fresh lime juice
2 teaspoons grated fresh ginger-root
3 cloves garlic, flattened
1/2 teaspoon dried red pepper flakes
4 boneless, skinless chicken breast halves
5 teaspoons olive oil
1/2 cup salsa
lime wedges
Directions:: 1. For marinade, combine lime juice, ginger, garlic and pepper flakes in a plastic bag. Add chicken. Chill for 2 hours or overnight turning bag occasionally.
2. In a large nonstick skillet cook chicken in hot oil over medium heat for 8-10 minutes or until chicken is tender and no longer pink, turning once. Serve with salsa and lime wedges.
